Valencians love their food and the city has an enormous selection of restaurants, providing both traditional
and modern Mediterranean cooking. Whether it be tapas or gourmet fine dining, it's all here!
It's worth mentioning that Spanish restaurants in general, are very child friendly and it's very common to see children dining out with their parents until late in the evening.
No piece about Spanish Gastronomy would be complete without mentioning Paella. Generally regarded as the
national dish (at least by the British!), it actually originates from the Valencian region. Made from locally
grown rice and traditionally cooked over an open fire, it's available in many varieties. Chicken and rabbit is
considered by the purists as The Valencian Paella, but equally popular are mixed versions with seafood or sometimes
chicken on its own. The basic ingredients are usually the same. Rice, broad beans, meat or fish, olive oil and
snails are cooked together in a wide shallow pan (La Paella). Saffron is added which gives the rice its distinctive
yellow colour and then rosemary branches to add extra flavour. The finished dish is garnished with pieces of fresh lemon and is best eaten straight from the pan.
